Easy Cheesy Broccoli Rice Casserole
Ingredients
Vegetable cooking spray
3/4 cup chopped onion
3/4 cup chopped celery
3 cups cooked rice
1 (10-ounce) package frozen chopped broccoli, thawed
1 (10-3/4-ounce) can cream of mushroom soup
3/4 cup grated Cheddar cheese, divided
1/2 cup sour cream
1 teaspoon salt
1/2 teaspoon ground black pepper
Directions
1. Preheat oven to 400 degrees.
2. Lightly coat large skillet with cooking spray.
3. Add onion and celery to skillet.
4. Place skillet on burner and turn burner on to medium heat.
5. Cook vegetables until tender crisp, about 3 minutes.
6. Stir in rice, broccoli, soup, 1/2 cup cheese, sour cream, salt
and pepper; mix well.
7. Turn burner off. Remove skillet from heat and place on hot pad.
8. Lightly coat 1-1/2- to 2-quart baking dish with cooking spray.
9. Spoon rice mixture into baking dish.
10. Place rice mixture in oven; bake 35 minutes.
11. Remove rice from oven and top with 1/4 cup cheese.
12. Return rice to oven and bake 3 minutes longer, or until cheese
melts.
13. Turn oven off.
14. Remove rice from oven and serve.
Makes 6 servings.
