1/2 cup sunflower kernels

1 (16-oz.) can garbanzo beans

3 cups cooked brown rice

1 medium onion, chopped

1 medium carrot, shredded

1/2 cup Italian-style breadcrumbs

1/3 cup chopped fresh parsley

2 eggs, lightly beaten

1/4 cup soy sauce

1 teaspoon dried thyme

Vegetable oil for frying

8 slices French bread, toasted

Happy Trails Rice Mix

Ingredients

2 cups bite-size crispy rice squares

2 cups bite-size crispy corn squares

2 cups puffed rice

1 cup dried banana chips

1 cup dry roasted peanuts

1 cup chocolate candies

1 cup seedless raisins

Directions

1. In large bowl, combine rice squares, corn squares, puffed rice, banana chips, peanuts, candies and raisins; mix well.

2. Store in tightly covered container.

Makes 10 servings.
