1/2 cup sunflower kernels
1 (16-oz.) can garbanzo beans
3 cups cooked brown rice
1 medium onion, chopped
1 medium carrot, shredded
1/2 cup Italian-style breadcrumbs
1/3 cup chopped fresh parsley
2 eggs, lightly beaten
1/4 cup soy sauce
1 teaspoon dried thyme
Vegetable oil for frying
8 slices French bread, toasted

VEGETARIAN SLOPPY JOES
Ingredients
1 tablespoon vegetable oil
1 medium onion, chopped
1 green pepper, chopped
3 cups cooked brown rice
2 16-ounce cans Mexican style pinto beans
3/4 cup hickory smoke barbecue sauce
4 to 6 whole grain buns
Directions
Heat oil in large skillet over medium-high heat. Add onion and
green pepper; cook 2 to 3 minutes. Add rice, beans and barbecue
sauce. Simmer 10 to 15 minutes, until heated through. Serve on buns.
Makes 4-6 servings.
Nutrition
Each serving provides 672 calories, 24 grams protein, 10 grams
